How does it work?

Foodswap.org is a free online classified ad website dedicated to food swappers everywhere. What is a food swap? Local food swaps (like the LA Food Swap) have been popping up just about everywhere; generally people get together at pre-determined locations to swap homemade/home grown food goods. With foodswap.org you can swap with the online community, just create an account (free) and go to the SWAP link and post an ad in you geographic location.  What food items can you swap on foodswap.org?

Canning Asparagus

Canning Asparagus - Spears or Pieces

Quantity: An average of 24½ pounds is needed per canner load of 7 quarts; an average of 16 pounds is needed per canner load of 9 pints. A crate weighs 31 pounds and yields 7 to 12 quarts--an average of 3½ pounds per quart.

Quality: Use tender, tight-tipped spears, 4 to 6 inches long.

Procedure: Wash asparagus and trim off tough scales. Break off tough stems and wash again. Cut into 1-inch pieces or can whole.

Mango Salsa

  • 6 cups diced unripe mango (about 3 to 4 large, hard green mangoes)
  • 1½ cups diced red bell pepper
  • ½ cup finely chopped yellow onion
  • ½ teaspoon crushed red pepper flakes
  • 2 teaspoons finely chopped garlic
  • 2 teaspoons finely chopped ginger
  • 1 cup light brown sugar
  • 1¼ cups cider vinegar (5%)
  • ½ cup water

Preparing and canning Tomatillo Green Salsa 

  • 5 cups chopped tomatillos
  • 1-½ cups seeded, chopped long green chiles
  • ½ cup seeded, finely chopped jalapeño peppers
  • 4 cups chopped onions
  • 1 cup bottled lemon or lime juice
  • 6 cloves garlic, finely chopped
  • 1 tablespoon ground cumin (optional)
  • 3 tablespoons dried oregano leaves (optional)
  • 1 tablespoon salt
  • 1 teaspoon black pepper
